Roasted Beet & Goat Cheese Salad with Orange Vinaigrette


Roasted Beet & Goat Cheese Salad with Orange Vinaigrette

Ingredients:

For the Beets:
  • 4 medium beets, scrubbed and trimmed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
For the Salad:
  • 5 ounces mixed greens
  • 4 ounces goat cheese, crumbled
  • 1/2 cup walnuts, toasted
  • 1/4 cup red onion, thinly sliced
For the Orange Vinaigrette:
  • 1/4 cup fresh orange juice
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey (optional)
  • Salt and pepper to taste

Instructions:

Roast the Beets:
  1. Preheat oven to 400°F (200°C).
  2. Wrap each beet individually in aluminum foil.
  3. Place the wrapped beets on a baking sheet and roast for 45-60 minutes, or until tender when pierced with a fork.
  4. Let cool slightly, then peel and dice or slice the beets.
  5. Toss the beets with 1 tablespoon of olive oil, salt, and pepper.
Make the Orange Vinaigrette:
  1. In a small bowl, whisk together orange juice, olive oil, balsamic vinegar, Dijon mustard, and honey (if using).
  2. Season with salt and pepper to taste.
Assemble the Salad:
  1. In a large bowl, combine mixed greens, roasted beets, goat cheese, walnuts, and red onion.
  2. Drizzle with orange vinaigrette and toss gently to combine.
  3. Serve immediately and enjoy!
