Roasted Beet & Goat Cheese Salad with Orange Vinaigrette
Ingredients:
For the Beets:
- 4 medium beets, scrubbed and trimmed
- 1 tablespoon olive oil
- Salt and pepper to taste
For the Salad:
- 5 ounces mixed greens
- 4 ounces goat cheese, crumbled
- 1/2 cup walnuts, toasted
- 1/4 cup red onion, thinly sliced
For the Orange Vinaigrette:
- 1/4 cup fresh orange juice
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey (optional)
- Salt and pepper to taste
Instructions:
Roast the Beets:
- Preheat oven to 400°F (200°C).
- Wrap each beet individually in aluminum foil.
- Place the wrapped beets on a baking sheet and roast for 45-60 minutes, or until tender when pierced with a fork.
- Let cool slightly, then peel and dice or slice the beets.
- Toss the beets with 1 tablespoon of olive oil, salt, and pepper.
Make the Orange Vinaigrette:
- In a small bowl, whisk together orange juice, olive oil, balsamic vinegar, Dijon mustard, and honey (if using).
- Season with salt and pepper to taste.
Assemble the Salad:
- In a large bowl, combine mixed greens, roasted beets, goat cheese, walnuts, and red onion.
- Drizzle with orange vinaigrette and toss gently to combine.
- Serve immediately and enjoy!
