This Citrus Shrimp & Avocado Power Bowl is packed with protein, healthy fats, and vitamins to fuel your weight loss journey. It’s a delicious and easy-to-prepare meal that’s perfect for lunch or dinner, and aligns perfectly with the nutritional guidance provided at Weight Achievement Center.

Ingredients

  • 4 oz cooked shrimp, peeled and deveined
  • 1/2 avocado, diced
  • 1/2 cup cooked quinoa
  • 1/4 cup orange segments, membranes removed
  • 1/4 cup grapefruit segments, membranes removed
  • 2 tablespoons red onion, thinly sliced
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the cooked quinoa, orange segments, grapefruit segments, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper to create the dressing.
  3. Pour the dressing over the quinoa mixture and toss gently to combine.
  4. Add the cooked shrimp and diced avocado to the bowl.
  5. Gently toss everything together, being careful not to mash the avocado.
