This Citrus Shrimp & Avocado Power Bowl is packed with protein, healthy fats, and vitamins to fuel your weight loss journey. It’s a delicious and easy-to-prepare meal that’s perfect for lunch or dinner, and aligns perfectly with the nutritional guidance provided at Weight Achievement Center.
Ingredients
- 4 oz cooked shrimp, peeled and deveined
- 1/2 avocado, diced
- 1/2 cup cooked quinoa
- 1/4 cup orange segments, membranes removed
- 1/4 cup grapefruit segments, membranes removed
- 2 tablespoons red onion, thinly sliced
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- In a medium bowl, combine the cooked quinoa, orange segments, grapefruit segments, red onion, and cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper to create the dressing.
- Pour the dressing over the quinoa mixture and toss gently to combine.
- Add the cooked shrimp and diced avocado to the bowl.
- Gently toss everything together, being careful not to mash the avocado.
