Winter Park Harvest Bowl with Maple-Dijon Vinaigrette
This vibrant and flavorful harvest bowl is packed with nutrients and perfect for a satisfying lunch or dinner. It’s also a great way to showcase seasonal ingredients from the Winter Park Farmers’ Market.
Ingredients:
For the Bowl:
- 1 cup cooked quinoa
- 1 cup roasted butternut squash, cubed
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans or walnuts
- 4 cups mixed greens (spinach, kale, romaine)
- 1 apple, diced
- 4 oz grilled or baked chicken breast, sliced (optional)
For the Maple-Dijon Vinaigrette:
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Prepare the Vinaigrette: In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined.
- Assemble the Bowls: Divide mixed greens evenly among bowls.
- Top with cooked quinoa, roasted butternut squash, dried cranberries, chopped pecans/walnuts, diced apple, and sliced chicken (if using).
- Drizzle with Vinaigrette: Drizzle the Maple-Dijon Vinaigrette over each bowl to taste.
