Winter Park Harvest Bowl with Maple-Dijon Vinaigrette

This vibrant and flavorful harvest bowl is packed with nutrients and perfect for a satisfying lunch or dinner. It’s also a great way to showcase seasonal ingredients from the Winter Park Farmers’ Market.

Ingredients:

For the Bowl:

  • 1 cup cooked quinoa
  • 1 cup roasted butternut squash, cubed
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts
  • 4 cups mixed greens (spinach, kale, romaine)
  • 1 apple, diced
  • 4 oz grilled or baked chicken breast, sliced (optional)

For the Maple-Dijon Vinaigrette:

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Prepare the Vinaigrette: In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined.
  2. Assemble the Bowls: Divide mixed greens evenly among bowls.
  3. Top with cooked quinoa, roasted butternut squash, dried cranberries, chopped pecans/walnuts, diced apple, and sliced chicken (if using).
  4. Drizzle with Vinaigrette: Drizzle the Maple-Dijon Vinaigrette over each bowl to taste.
  5. Serve: Enjoy immediately!

Notes:

  • Feel free to customize this bowl with your favorite seasonal vegetables. Roasted Brussels sprouts, sweet potatoes, or beets would also be delicious additions.
  • For a vegetarian option, omit the chicken and add chickpeas or lentils for protein.
  • You can prepare the quinoa and butternut squash ahead of time to save time during assembly.
