Ingredients:

For the Roasted Vegetables:

  • 1 cup broccoli florets
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/2 red onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Quinoa:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth

For the Lemon-Herb Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Optional Toppings:

  • Avocado slices
  • Feta cheese crumbles
  • Sunflower seeds

Instructions:

  1. Roast the Vegetables: Preheat oven to 400°F (200°C). Toss broccoli, bell pepper, zucchini, and red onion with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until vegetables are tender and slightly browned.
