Citrus Salmon with Quinoa & Asparagus

Ingredients:

  • 4 (4-ounce) salmon fillets
  • 1 tablespoon olive oil
  • 1 orange, juiced and zested
  • 1 lemon, juiced and zested
  • 1 clove garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup quinoa, cooked according to package directions
  • 1 pound asparagus, trimmed

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, orange juice, orange zest, lemon juice, lemon zest, garlic, thyme, salt, and pepper.
  3. Place salmon fillets in a baking dish and pour the citrus marinade over them. Let marinate for at least 15 minutes.
